If cron job failed to run it wasn’t noticed you may have to make another request for your gitlab certificate. Here’s a one liner that should help point you into the right direction.
/root/letsencrypt/letsencrypt-auto certonly -c /root/letsencrypt-config/gitlab.ini
then
./letsencrypt-auto renew
then
gitlab-cfg restart
